Blu del Gregge Pecorino Erborinato
Blu del Gregge is the first blue cheese of Busti family and it is produced with pure sheep milk. The addiction of selected noble mould (penicillium roqueforti) injected in milk lets the typical marbling grow which makes the inside of the cheese pearl white in colour with characteristic blue-green veins and a soft texture. It is a versatile Pecorino which is perfect for cooking. Its strong flavour gives a nice extra touch to starters, first courses, second courses and even desserts. It is available upon reservation.
